ON THE MENU
Pick of Chef DENNIS TUA From Nigeria West Africa. This menue is brought to you by the African Caribbean Food Market from Oakland, CA.
Jollof Rice – A beloved West African staple, Jollof Rice is a fragrant, one-pot dish made with long-grain rice simmered in a savory tomato-based sauce infused with a blend of spices, onions, and bell peppers. The dish has regional variations across West Africa, with Nigeria, Ghana, and Senegal each having their own twist. Ours features a perfect balance of flavors with a deep, smoky undertone, offering a delicious introduction to African cuisine.

Fried Plantains – Sweet, ripe plantains sliced and lightly fried to golden perfection. Crispy on the outside and tender on the inside, this dish is enjoyed as a side across Africa and the Caribbean. It complements savory dishes beautifully, adding a natural sweetness to the plate.

Baked Fish – Fresh fish, marinated with a blend of aromatic herbs and spices, then baked to perfection. We use a flavorful mix of garlic, ginger, onions, and African spices to create a dish that is both moist and full of depth. This dish is inspired by coastal West African cooking traditions, where fish is a key component of many meals.

Baked Chicken – Succulent chicken marinated in a rich, spicy blend of African seasonings, including paprika, thyme, curry powder, and a touch of heat from cayenne pepper. Roasted to perfection, it delivers a crispy skin and juicy, tender meat. This dish is influenced by the popular Nigerian and Ghanaian style of seasoned roasted meats.

Baked Beef – Well-seasoned, slow-baked beef infused with a medley of African spices. The meat is marinated to ensure tenderness and deep flavor, incorporating flavors reminiscent of Suya, a popular West African grilled beef dish known for its smoky and spicy seasoning.

Sautéed Mixed Vegetables (Kale, Carrot, Spinach) – A vibrant and nutritious dish where fresh kale, carrots, and spinach are lightly sautéed with onions, garlic, and traditional seasonings. This combination is inspired by the leafy vegetable stews commonly eaten across Africa, particularly in Nigeria, Ghana, and Cameroon. It’s hearty, delicious, and pairs well with all the other dishes.
Rather than a traditional Western-style entrée, West African meals are often served in a communal style with a balance of starches, proteins, and vegetables on one plate. Jollof Rice is typically the main component, complemented by a protein (chicken, beef, or fish) and vegetables. This style of serving reflects the rich cultural heritage of African dining, where meals are meant to be shared and enjoyed together.
